  1. For the cherries: Add cherries, sugar, brandy to a saucepan. Cook, uncovered, until the cherries start to break down and the juice thickens (about 20 minutes). Allow to cool.
  2. For the Cream: Place the cream, sugar and vanilla in a bowl, with an electric mixer, beat the cream until medium peaks form. Set aside in the fridge.
  3. To serve: Fill parfait glasses with a good dollop of whipped cream, top with a couple of spoonful of the cherry compote, add spoonfull of crushed meringue.
  4. Repeat the layering- cream, cherries and meringue. Finish off with whipped cream, add the whole fresh cherries to each parfait as a garnish. Dust with icing sugar.
