- Preheat oven to 180° Celsius.
- On the stovetop, heat olive oil in a pan on a low heat. Be careful not to overheat it, as it will burn easily.
- Once warmed, add onion, garlic, thyme, salt, pepper and speck. Sweat these, cooking on a low heat, for five minutes.
- Add sliced brussels sprouts to the pan, sauteing briefly at a higher temperature to partially cook the sprouts and lightly crisp the speck.
- Place the pan in the oven if safe, or transfer to a tray, for an additional five minutes of cooking.
- Serve with bread — a baguette works nicely with this dish.
