- Sift flour into a bowl.
- In a separate bowl, whisk together eggs and milk.
- Pour egg mixture over flour and mix until smooth.
- Add sweet corn, zucchini and cheese, and stir until well combined.
- Heat oil in a frypan.
- Add 1/4 cup of the mixture into the pan for each fritter and cook for 3-4 minutes per side, until golden.
- Cool the fritters on a wire rack before serving, so they stay crispy on both sides.
- Serve with a spoonful of Greek yoghurt and some salad.
