A stack of delicious looking corn and zucchini fritters

  1. Sift flour into a bowl.
  2. In a separate bowl, whisk together eggs and milk.
  3. Pour egg mixture over flour and mix until smooth.
  4. Add sweet corn, zucchini and cheese, and stir until well combined.
  5. Heat oil in a frypan.
  6. Add 1/4 cup of the mixture into the pan for each fritter and cook for 3-4 minutes per side, until golden.
  7. Cool the fritters on a wire rack before serving, so they stay crispy on both sides.
  8. Serve with a spoonful of Greek yoghurt and some salad.
