For the sauce:

To serve:

  1. Preheat your oven to 200°C.
  2. In a small bowl, whisk together the pomegranate molasses, honey, garlic, ground cumin, ground coriander, salt and pepper.
  3. Line a large baking tray with baking paper. Place the sliced onions on the tray and layer sausages on top. Pour the sauce over the sausages and onions, making sure everything is well coated.
  4. Place the tray in the preheated oven and bake for 30-35 minutes, or until the sausages are cooked through and the onions are caramelised, tossing once or twice halfway through cooking.
  5. To serve, cut a fresh bread roll down the middle. Spread with butter, add a sausage and lots of the onions. Drizzle extra pomegranate molasses and honey over the sausages and onion and enjoy.
